It started off as four friends meeting at regular intervals. But because we were doing more than just having a meal—we were doing ratings, rankings and a full review—it became an interesting archive over time. After 70-odd reviews, we decided to do a book.</p><hr><p><strong><span >Q.</span> </strong><b>How has Delhi’s food scene evolved?</b></p><p>The eateries in my younger days were all in the five-star hotels. They were the ones innovating. Of course, we had institutions like Embassy and Kwality, then Nirula’s brought in the culture of western food. Around 2010-2012, nouvelle cuisine was all the rage; then, after that, a pullback. Some of this is visible in the book</p><hr><p><strong><span >Q.</span> </strong><b>Would you say Delhi has finally become a truly global food city?</b></p><p>We’re not quite there yet. Even Goa has a wider variety. But you can see flickers. Food delivery has opened up a new market. But Delhi’s strength continues to be in its old dishes, the way the dal makhani is made, the way some kebabs are made, the daulat ki chaat made from time immemorial.</p><hr><p><strong><span >Q.</span> </strong><b>How does it feel to have completed 10 years of the Serendipity Arts Festival?</b></p><p>It feels wonderful. Starting out, I told my team we should do something to scale, because in a country as large and diverse as ours, you cannot make an impact otherwise.
